Chef Andrei Lapin, the head chef of the YAUZA restaurant, was born and raised in Tashkent, and later moved to Moscow. He studied at a college specializing in hospitality management, but decided to pursue a career in culinary arts. He has been in the profession for 11 years, having completed numerous internships in Tashkent. His first job in Moscow was at Mushrooms, followed by Wine&Crab, and then White Rabbit from 2019 to 2022. He joined YAUZA immediately after.

He adheres to a European style and focuses on comfort food, so guests at YAUZA can spend the entire day there – coming for lunch and staying for dinner to try everything. Andrei works with local and seasonal ingredients, carefully selecting them at the market, which he visits regularly for inspiration.

Andrei Lapin considers the Far Eastern dumplings with seafood and the "Dachny" salad (Yauza salad) to be his signature dishes, both of which reflect the spirit of the project. The dishes that have become particularly popular with guests include avocado with eel and kaffir lime, and chicken with ginger sauce and zucchini.
