About
Rashid Rakhmanov has been studying the cuisine of Latin America for many years. He was born and raised in Perm. At the age of 18, Rashid moved to Istanbul to be with a girlfriend and worked for almost a year at a restaurant in the globally renowned Zuma chain. He then moved to a restaurant where the head chef was Peruvian Hiroki Takimura. It was Takimura who introduced Rashid to the entire world of Peruvian cuisine. In 2012, he worked at the Astrid & Gaston restaurant under the then relatively unknown Virgilio Martínez, and also completed internships at La Mar and Tanta. In 2018, ARMAP (the Association of Restaurateurs of Peru) appointed him as the ambassador of Peruvian cuisine in Russia. In 2021, in Brussels, he became the only foreigner to receive the Inkazteca International Awards for promoting Peruvian cuisine worldwide. Rashid was recognized for his "invaluable contribution to the development, popularization, and preservation of the biodiversity and cultural characteristics of Peruvian cuisine," and received a special diploma and a letter of gratitude from representatives of the Peruvian government.
