Nina Nadolinskaya is the head pastry chef at The Carlton, Moscow, and her professional philosophy is based on a combination of classic French techniques, impeccable craftsmanship, and a modern approach to pastry arts.

A special place in her work is held by chocolate, artisanal baked goods made with natural sourdough, and the creation of original desserts, where taste, aesthetics, and attention to detail combine to create a complete gastronomic story. Nina develops dessert collections for the display cases, creates signature complimentary treats for guests, and crafts unique chocolate sculptures, transforming each item into a standalone piece with its own distinct character. At The Carlton, Moscow, Nina is responsible for the concept and implementation of pastry services for events of all sizes, including banquets and celebrations with over 1,000 guests. Over the years, she has participated in projects for leading international hotel and restaurant brands, including Four Seasons Hotels, as well as the Novikov Group restaurant holding. This experience has given her a deep understanding of premium service, modern gastronomy, and effective management of pastry production. Nina's professional development is closely linked to training with recognized masters of the world of pastry. She studied at Bellouet Conseil in Paris, one of the most prestigious schools in France for pastry arts. Among her mentors was Ludovic Richard, a world and European champion in baking. It is his signature sourdough, with a history of over 30 years, that is currently used at The Carlton, Moscow to bake bread and croissants using classic French techniques. Nina also honed her skills at the Valrhona School in Dubai, where she studied modern chocolate-making techniques and current trends in pastry arts. She successfully integrates the knowledge she gained into her daily practice, combining French traditions with modern gastronomic approaches. Nina is an expert in organizing pastry production for large-scale events and regularly speaks at leading industry events, including Modern Bakery Moscow and Moscow Cake Show. In addition, she is the head pastry instructor at Novikov School and the Stanfood Academy, where she shares her practical experience and signature techniques with professional pastry chefs and aspiring specialists. Today, Nina leads a team of 20 specialists, paying particular attention to employee development, a mentoring culture, and professional growth. At the core of her approach are high discipline, attention to detail, and a constant search for new solutions that allow her to create gastronomic projects that meet the highest standards of the hospitality industry.
