Maxim's first restaurant was the iconic "Mario" on Klymakshina Street (2009), where he was noticed by Italian cuisine guru Maurizio Mazzucato, who took him on as an apprentice. Maxim considers Maurizio Mazzucato his first mentor. After two years at "Mario," Maxim was invited by Remo Mazzucato to the "Piazza Italiana" restaurant (2011). Later, Maxim's friend, Italian Christian Lorenzini, offered him a position as the head chef at the "Christian" restaurant, specializing in авторская (author's) Italian cuisine. In 2014, Maxim realized his dream and opened his own project: a summer restaurant-terrace called "Cafe Nebo. Zvezdy Leto" (Cafe Sky. Stars Summer). After the season ended, he returned to "Christian." In March 2016, he launched his own авторская (author's) project on Tsvetnoy Boulevard: a restaurant with impeccable авторская (author's) cuisine and unique presentations called "The Mad Cook." In 2019, Maxim launched three more gastronomic projects: "Yum Yum Japanese Street-food" and "Deep Fried Fish" on the gastronomic street STREAT, as well as the авторская (author's) street-food concept "Gyros&Brothers." In 2021, he opened the "Slice NYC Pizza" pizzeria, serving legendary New York-style pizza. He has three relevant educational qualifications, including a degree in economics and management from Plekhanov University. His own restaurant is "The Mad Cook." His restaurant holding company is "ByMaximVolkov."
He was born and raised in the city of Ivanovo. At the age of 15, he enrolled in the Moscow Food Technical College. At 18, he became a head chef in his hometown, while continuing his studies. He enjoys managing processes and creatively approaching the creation of dishes, allowing his creative potential to shine through and surprise guests with unusual combinations. Maxim is often seen in the dining room, where he readily engages in conversation with guests, assists the waitstaff, and actively supports the kitchen during service. Outside of work, Maxim enjoys reading, particularly classical literature.
