Concept by Valery Abel and Nikita Alexandrov. Moscow. Tilda is a cozy restaurant with 30 seats, featuring авторская (author's) cuisine and a minimalist design, tucked away in a quiet alley off Patriarch's Ponds. Owners Valery Abel and Nikita Alexandrov have been cultivating a "friends & family" atmosphere since 2017. When you step into "Tilda," it feels like coming home to old friends – the restaurant's team surrounds each guest with genuine love and care, striving to make everyone feel comfortable and welcome. Over the years, the project has not only won the hearts of many guests but has also received numerous accolades and awards: Michelin Guide Moscow in the Bib Gourmand category for 2022, Louis Vuitton City Guide 2021 (Moscow), Russian Wine Awards for "Best Wine List" in 2018 and 2020, and "Best Breakfast Spot" according to The City in 2022. Chef Alexander Rusakov (formerly of "Mari Vanna," "Pekarnya Michel," and YURA) showcases his approach to comfort food at Tilda, combining simple, familiar ingredients with sophisticated techniques. For example, the salmon is cooked sous vide at 42 degrees, the ratatouille features Provençal pesto and Parmesan foam, and the pasta is homemade using durum wheat and chicken yolks. The beef cheeks are braised in red wine with aromatic herbs, while the pumpkin is roasted with honey and soy sauce. Chef Rusakov also creates the desserts, such as the toffee cake – a baked fig pudding soaked in crème caramel and a light sour cream frosting with condensed milk. Nikita Alexandrov, co-owner and sommelier, is responsible for the wine selection at Tilda. He has assembled an impressive collection of both trendy biodynamic and natural wines, as well as classic labels, offering something for every occasion. A particular highlight of the project is the selection of over 35 wines by the glass, including champagne at an unprecedented price. The signature cocktails, each with a story behind them, created by head bartender Alexander Merkov (formerly of "Manon," Mercedes Bar, Духless, and 15 Kitchen + Bar), have become a reason for many guests to visit "Tilda." Sasha not only creates cocktails and homemade infusions but also sources the ingredients himself, adhering to the principle of seasonality. For example, the "Asian" cocktail, made with gin, lychee, and lemongrass, is a tribute to Asia and its contributions to Europe. The "Lemon French" cocktail, made with sparkling wine, lemon, and barberry, was dedicated to a very beautiful woman, while the "Lalakalila" cocktail, with its rowan cordial, was born out of a joke. Interestingly, in addition to his experience working at the bars of key Moscow establishments, head bartender Alexander Merkov has also worked in the kitchens of restaurants like Pinch and Glenuill, which has given him a deep understanding of ingredients. Since autumn 2017, Tilda has continued to be a unique and cozy place where every employee is not only a professional in their field but also a guide to the world of gastronomy and hedonism, a friend, a confidant, and simply a good conversationalist.
