After completing his training at the SWISSAM academy, Valery went on an internship in the United States. His first internship was at the Betony restaurant (New York, New York), which holds 1 Michelin star (2015) and a 3-star rating from The New York Times. Valery worked under Chef Brice Shumman for six months. He then spent another six months at the Manresa restaurant (Los Gatos, California), owned by David Kinch and part of the Relais & Chateaux group. This restaurant, run by the renowned American chef, also holds 3 Michelin stars.
In Russia, Valery has worked on several notable projects in Moscow: Beluga, Krasota, Zhirko, and 4rest.

He was an athlete in the past. Currently, he doesn't have enough time for sports, so he considers activities like swimming and gym workouts as hobbies. Inspiration for new dishes: Valery is primarily inspired by the ingredients themselves: "Especially when you go to the market and find something truly special!"
