About
Roman Chemerenko has been working at Bellini Gastronomic Ecosystem for over 15 years and manages 12 projects within the ecosystem, including "Cheshuya," "Khozyain Taygi," Formaggi, and Bistrot de Luxe Home. His knowledge of lean manufacturing and production ergonomics allows him to successfully manage a diverse range of projects. Roman completed a retraining course at the prestigious French culinary school INSTITUT PAUL BOCUSE. He is a mentor to a large team of chefs at Bellini restaurants, as well as to students at the Siberian Federal University Institute of Gastronomy. In his work, Roman promotes the concept of locality and creates new flavors, using the principles of gastronomic archetypes. He pays attention not only to the taste and texture of the ingredients, but also to how each element complements the others. Roman places great emphasis on the development of local cuisine, regional chefs, and his team. Every month, Hello wine restaurant hosts gastronomic dinners, where chefs from different cities in Russia share their stories and philosophies, introduce guests to their signature dishes and the cuisines of their establishments. Hello wine has already hosted over 16 gastronomic dinners with chefs from Irkutsk, Bratsk, Novosibirsk, Khabarovsk, Kaliningrad, Moscow, and other cities. In 2023, Roman was named the winner of the Second All-Russian Gastronomic Competition "SU-Chef," and in 2022, he received the "CHEF OF THE YEAR" award from the media portal "Sol."
