His love for pastry began unexpectedly: he initially applied to become a cook, but there were no openings, so he agreed to become a pastry chef. However, after two months, when the opportunity to transfer arose, he realized he didn't want to go back – the art of pastry had captivated him with its complexity, technical challenges, and endless possibilities for creativity. In Yegor's gastronomic desserts, anything can be the star ingredient, except for sugar. The chef is convinced that true flavor cannot be emphasized with sweetness; it must be carefully revealed. He honed this principle at the legendary "Prague" restaurant on Arbat Street – the very place where the "Bird's Milk" and "Prague" cakes were created. A significant milestone in his career was joining the Selfie restaurant, where he has been working with Chef Anatoly Kazakov for 11 years since its opening. Throughout his professional journey, the chef has participated in numerous dinners and masterclasses with colleagues from different countries and projects, which has broadened his horizons and enhanced his professionalism. Today, Yegor creates seasonal and themed desserts, and reinterprets classic pastries, drawing inspiration from unconventional solutions. The chef finds inspiration directly in the kitchen: in working with farmers, in anticipating the arrival of new ingredients, and in searching for the perfect flavor balance.
