Dmitry Golenin is the head chef at the Sage restaurant (ranked 4th by WhereToEat Moscow 2024, 8th by WhereToEat Russia 2024, 6th by WhereToEat Moscow 2023, TOP-20 best restaurants in Russia according to WhereToEat Russia 2023, 7th by WhereToEat Moscow 2022), a speaker at the Stanfood academy, the Novikov Space culinary school, the international forum for chefs "CHEF'S BREAKFAST," and the Gastreet festival.

In 2024, Dmitry received an award in the "Chef of the Year" category at the "Best in the Industry 2024. Palm Branch of the Restaurant Business" awards.

Dmitry was born and raised in Penza, where he received his culinary education and gained his first experience in the restaurant industry. In 2013, he moved to St. Petersburg to gain new professional experience. He worked as a sous chef at the "ZimaLeto" and "Una" projects with Igor Zorin. In 2016, he went on a training program at Dmitry Blinov's TARTARBAR restaurant, where he received a job offer. After six months, he was promoted to sous chef. As Dmitry himself says: "I had the most impactful training experience at 'Tartarbar.' I started to look at my profession, and the restaurant as a whole, from a completely new perspective. Dmitry Blinov has incredible energy, a special approach to the craft, a well-organized kitchen, and every flavor is meticulously refined, with perfect order." In 2019, Dmitry was offered the position of head chef at the newly opening All Seasons restaurant in the center of St. Petersburg. The restaurant's concept was a seasonal menu change, which meant a focus on sourcing the most local possible ingredients, selecting high-quality new suppliers, and constantly searching for new ideas, recipes, and inspiration, as developing a new menu every three months in a fully operational restaurant was a challenging task. During his time at All Seasons, Dmitry realized his potential and further developed his skills. In the summer of 2021, Dmitry returned to Duoband and, in the winter, went on a two-month internship at the Frantzen restaurant (3 Michelin stars) in Stockholm. After returning, he became the head chef of the joint project Sage, created by Dmitry Blinov and Vladimir Perelman. This is a signature restaurant where wisdom and conceptual awareness are paramount, embodying minimalism and thoughtfulness from the interior design to the preparation of dishes. In the kitchen, Dmitry brings his own ideas to life, preferring a "living" menu that changes regularly based on seasonal ingredients. Dmitry often experiments with vegetables, mushrooms, and root vegetables, conveying the essence of a dish with a minimal number of ingredients. His approach to menu development and the introduction of seasonal dishes is based on mindfulness and concise combinations. Working with farm-fresh and organic products allows him to emphasize his individual approach. Dmitry Golenin's vegan menu, consisting of simple ingredients perfected by the chef, continues to surprise guests year after year. In Dmitry's view, a chef is a craftsman who works with their hands. He not only generates ideas and oversees the kitchen but also actively participates in all aspects of the restaurant's operations. For Dmitry, the greatest reward is seeing the restaurant fully booked, and his favorite activity is observing the reactions of new and regular guests.
