If stir-fry of wagyu beef is for you, you can choose your sauce from among Guangdong-style oyster sauce, Sichuan-style yúxiāng and Beijing-style miso. Pairing sweet, sour and spicy flavours with a suitable wine provides an added dimension of fun. At lunch, under the name Bifun Azuma, the restaurant serves fried rice vermicelli (‘bifun’ in Japanese) and Chinese zongzi.
