Tunguska restaurant offers a fresh perspective on Siberian cuisine, creating a modern interpretation. The concept is rooted in Siberian culinary traditions, which represent the culmination of a long-standing interaction between Russian cuisine and the cuisines of neighboring Asian countries, as well as the dietary habits of the indigenous peoples of the North. This unique foundation has been enhanced at Tunguska with techniques, trends, and flavor profiles from various parts of the modern global world. The menu places particular emphasis on locally sourced ingredients from different regions of the Yenisei Siberia, as well as cooking techniques using live fire – in a traditional Russian wood-fired oven and on an open-grill charcoal.
