Trendy Southern Cuisine: The Bazar restaurant invites guests on a unique culinary journey through the gastronomic traditions of the Caucasus.
Over 80 dishes: Talented chefs Aslan Toguzov and Aslan Bestaev have created a truly unique menu to provide the best introduction to Caucasian cuisine. Classic recipes have been enhanced with local Southern ingredients and their own creative interpretations, resulting in unique takes on familiar dishes. For example, appetizers include honey tuile with pumpkin cream, smoked duck, and airy Camembert; amber persimmons with duck confit, cream cheese, and a honey-mustard dressing; salmon tartare with Abkhazian mandarin and persimmons; gebzhalia with garlic and mint; mushrooms baked with stracciatella cheese and Roquefort mousse. A must-try is burrata with persimmons, truffle paste, and macadamia nuts. Main courses at The Bazar restaurant include trout coated in nut crust with spinach and curry sauce; braised beef with bone marrow, caramelized carrots, parsley cream, and parsnip puree; veal liver with mashed potatoes and fried onions; lamb tongues with Jerusalem artichoke puree; cod with Black Sea mussels. From the soups, the chefs recommend trying the tomato soup with seafood and fish, and the pumpkin cream soup with stracciatella cheese and crab meat. And of course, khachapuri – how could it be missing? At The Bazar, it is prepared, among other ways, on a grill. And even with Roquefort cheese, pomegranate, and pine nuts. The local cuisine has taken on a new dimension! The restaurant offers a rich entertainment program on the 2nd floor, including a music bar & karaoke and a nightclub. For younger guests, The Bazar features a large children's room, a creative corner, and animators on weekends. It's very convenient! Chefs Aslan Toguzov and Aslan Bestaev have worked together for over 14 years in restaurants in Vladikavkaz, Moscow, and Sochi, mastering the intricacies of Russian, European, and Pan-Asian cuisines under the guidance of the best masters. They have translated their acquired knowledge, boundless energy, and love of gastronomy into the menu of The Bazar restaurant.
