Charming restaurant with honest and authentic cuisine: One Chef Studio on Petrovka Located in the center of Moscow, at 30 Petrovka Street, is the One Chef Studio concept. Here, three chef friends—Andrey Sokolov ("Birds and Bees," Sempre, "Galki," Soho Family), Jean Uteuliev (Soho Family), and Konstantin Shuralev ("Gusyatnikoff," "Rybný Bazar," "Volna," "Bocha," the "Druzhba" cafe)—embody their culinary ideas in a format they call a "restaurant." One Chef Studio is a workshop of taste and inspiration. All dishes are prepared right in front of the guests, and each of the three chefs personally participates in the preparation and serving. The idea for the project came from Andrey Sokolov, who was planning to open a chef's studio (a term suggested by designer friends), but he joined forces with Jean and Konstantin to create a dream team. The restaurant was built by the team themselves, and even family members got involved. Instead of the standard approach with printed menus, the team wrote the menu by hand—as a reflection of the philosophy of simplicity and sincerity. Technical specifications and strict regulations are also not part of One Chef Studio. Recipes are created intuitively—the dishes embody the chefs' favorite flavors. The names of the sections and dishes are also created according to the same principle. For example, "To Start" offers a classic liver pâté, which is used as a filling for fluffy, airy pastries (700 rubles). Salads are prepared in the style of bowls: you can choose a combination of crispy chicken with ginger sauce (750 rubles), roasted duck with vegetables (750 rubles), or salmon with siracha (820 rubles). Instead of burgers, they offer unique sandwiches in the "With Bread" section: a turbo-sandwich with "Vegas" steak (850 rubles), a sandwich with roast beef and vegetables (800 rubles), and a sandwich with chicken and cheddar (750 rubles). The recipe for the signature ramen (750 rubles) with pork in a rich, classic Chinese-style broth has been perfected for 6 years, and it is now a source of pride for the restaurant. For main courses, you can choose pasta mafaldine with prosciutto (790 rubles), black cod with "Naples" sauce (950 rubles), "Machete" steaks (1550 rubles) with ptitim and lecho, or "Denver" with fresh herbs (1350 rubles). Lamb loin is hidden under the intriguing name "Pistols" (1400 rubles). This dish is inspired by Caucasian traditions, with respect for the masters who taught Andrey Sokolov how to properly work with meat at the Dagestan restaurant MuRRad. For over a month, the chefs tested different dough recipes and prepared appetizing Neapolitan pizzas with puffy edges and a generous topping: prosciutto with gorgonzola, basturma and mandarins, canned meat with horseradish sauce, spicy chorizo and cracklings (950 rubles each), and a delicate one with salmon tartare and sun-dried tomatoes (1100 rubles). To the question "Will there be any desserts?", the menu offers three original combinations. The perfect dessert for sweet lovers is a trifle with nuts, named after Bridget Jones (590 rubles), fresh, juicy mango is complemented by Oreo crumbs and hemp fiber (590 rubles), and a tart is made with fragrant pecan (690 rubles)—moderately sweet, without any extra additives. Only nuts, a little caramel, and a thin shortcrust pastry. In collaboration with the wine company "Hedonist," the team has selected a portfolio of rare and exclusive wines. Glasses are served in 150 ml portions (from 700 rubles per glass)—so that guests can fully enjoy their experience. A compact cocktail menu, developed with the participation of Konstantin Ponomarev, focuses on sours and spritzes (750 rubles each). The interior of One Chef Studio features oak island tables combined with white brickwork, subtly blending the loft style with a light Scandinavian classic. Guests can relax in a homey atmosphere on soft sofas around coffee tables, along wide panoramic windows, or become part of the process—watching the chefs at work and chatting with them at one of the two kitchen islands in the center of the space. The intimate dining room with 21 seats is ideal for family celebrations, corporate events, and friendly gatherings in a relaxed atmosphere. The music at One Chef Studio is an integral part of the concept, adapting to the mood and time of day and reflecting the chefs' tastes. The sound features a selection of artists from the legendary Metallica to more refined compositions like Dream Soda's "Forever Young." The team plans to invite guest chefs and host joint themed dinners. DJs play on weekends and holidays. And on a large screen, they show tournaments and streams of popular video games. One Chef Studio is a place where food, atmosphere, and creativity blend into one. "We created a restaurant for ourselves and our guests. This vibe of freedom and sincere love for our craft is conveyed to everyone who comes here," say the chefs.
