The concept of the "Multikultura" gastro-bistro is based on the dining traditions of a multinational family, belonging to Maxim Polzikov, where Russian, Spanish, Jewish, and Azerbaijani influences intertwine.

The foundation of the "Multikultura" gastro-bistro lies in the family traditions of generous hospitality, which are characteristic of Maxim Polzikov, the founder of the Michelin-starred "Rybtorg" restaurant in 2022, and former managing director of the Ginza Project restaurant group. The multicultural dishes, which naturally emerged from Maxim's multinational family, blending Russian, Spanish, Jewish, and Azerbaijani heritage, form the basis of the menu. Chef Anton Tikhiy has given these dishes a modern restaurant interpretation, preserving the authenticity of the national flavors while sometimes using unexpected ingredients, and enriching them with his own culinary perspective, drawing on both international experience and Russian gastronomic traditions from Kaliningrad to Vladivostok.
