Kaifuso – a new project by Arkady Novikov, inspired by Asian culture.
Located in the heart of Moscow, on Kuznetsky Most, Kaifuso is a restaurant-club, the latest venture by Arkady Novikov. The name refers to the first collection of Japanese poetry from the 8th century, inspired by Chinese classics. This historical reference serves as a metaphor for the project's culinary philosophy. Executive Chef Igor Korrev has created a menu where each dish is dedicated to different regions of Asia. The Chinese cuisine is overseen by a whole dynasty of chefs from Shenyang: Chef Liu Xueyan, his wife Zhe Cze – a pastry chef with 20 years of experience, and their relatives. They prepare the famous Peking duck with crispy skin, signature dim sum, and beef with black pepper. The Japanese section is a celebration of pure flavors. In the sushi bar, chefs from Tokyo and Osaka serve perfect sashimi made with the freshest fish. Among the hot dishes are baked black cod marinated in miso, salmon with edamame and vegetables in Sichuan oil, and marbled Wagyu beef. The design bureau of Yevgenia Uzhegova created an interior that is a journey in itself: hand-painted walls with peonies and cranes, a bar counter made from a solid piece of beech wood, and leather sofas in a cinnabar color. Every evening, after 11:00 PM, the space transforms – the lights dim, and the restaurant turns into a club reminiscent of New York's Chinatown in the 1950s. Kaifuso is a place where you can spend the entire evening: start with dinner surrounded by silk panels and continue with cocktails at the bar. The project has already become a new attraction for those who appreciate Eastern aesthetics and Moscow's sophisticated style.
