A love letter to brasseries as a phenomenon, as a kind of lost wonder, viewed from a modern perspective.
The name is designed to evoke recognition among art lovers and connoisseurs of "savoir vivre": "Le Chat Noir" (The Black Cat) was the name of the famous cabaret opened in 1881 in Montmartre, where you could meet Verlaine, Maupassant, Debussy, and Toulouse-Lautrec. The culture of French cafes and brasseries is not limited to gastronomy; it's a scene of everyday life, inseparable from the history of painting and literature. The time spent in lively, friendly debates at cozy tables by generations of geniuses – from the "poètes maudits" and Impressionists to the Modernists and avant-garde masters – has found immortality in their works. Like all Maison Dellos projects, "Le Chat Noir" represents a Russian perspective on world culture, with its own tradition. For example, Ilya Repin's painting "Parisian Cafe," which captures the atmosphere of a fashionable establishment on the Champs-Élysées, depicting the types and portraits of famous patrons, was painted before Renoir and Manet paid homage to this theme. Andrey Dellos's team pays exceptional attention to the interior, creating a magical illusion of a place with history where there were bare walls just yesterday. The warmth and craftsmanship, the lightness and elegance, the flowing lines and wooden arches with beveled glass, the play of light, reflections, and facets all contribute to a deeper space and convey the unique charm characteristic of old French cafes. Every detail is carefully considered – for example, it took two months to select just one shade of tile, handcrafted in their own workshops. Eduard Arkhipov (the best chef in the Urals in 2020 according to Wheretoeat, "Soika," Engels, "Gastroli," "Gady, Kraby i Vino") effortlessly combines tradition and modernity, creating stylish, original interpretations of classic dishes. Today, the menu at "Le Chat Noir" features dishes such as venison pie, coq au vin, pâté en croûte, tortellini with rabbit, foie gras terrine, "aglio e olio" with crab, "cacio e pepe," tarte tatin with pear and quince ice cream, and other hits that have become beloved by guests from all over the world.
