Dmitry Nesterov, head bartender at Simach in Nedalny, has opened his first independent bar project at Petrovka 23/10. The name is not only derived from the address of the bar but also from the entrance area, which was designed with a marble-clad door combined with sleek metal lines and textured Krize glass.

"I had no doubts about the concept I wanted to create. I knew it had to be a great cocktail bar. I've been working in the bar industry for 20 years, 12 of which I've spent as head bartender at first the Denis Simachev Shop & Bar, and now at Simach in Nedalny. One day, I had the idea to open my own bar with a wide range of offerings. 2310 is a cocktail bar where every guest will find something to their liking. We have both classic, old-school cocktails, the recipes of which date back 100 years, and modern versions with interesting ingredients and original presentations. Whether you're a fan of classic cocktails or something more trendy, or simply want to enjoy a good wine or beer, we have it all," says Dmitry Nesterov.

The main focus at Door 2310 is on cocktails. Here, they pay homage to the classics while also keeping up with the latest trends. The menu features four sections that are planned to be further developed: Aperitivo, Signature, Classic, and Seasonal. Head bartender Alexei Talantsev highlights three cocktails that are worth trying: the Ume Fashioned, a bright and moderately sweet cocktail with a long-lasting Japanese plum aftertaste (Japanese whiskey, plum sake, a few drops of Peycha bitters) (890 rubles), the Nester Fizz, a velvety and refreshing cocktail (Italian aperitif, watermelon, shiso liqueur, sparkling wine) (800 rubles), and the Berry Crush, a bright and fruity cocktail perfect for everyday enjoyment (raspberry-rhubarb gin, strawberry aperitif, berry bitters) (750 rubles).

In addition to the cocktail menu, the bar and bistro features a concise wine list that meets all modern demands. The sommelier focused on interesting and unconventional options, as the project's creator caters to both the tastes of regular customers and connoisseurs.

In addition to the drinks, head chef Yegor Yermakov (from French restaurants Hôtel d'Europe and La Bonne Etape in Château-Arnoux-Saint-Auban (Michelin star), Radisson Collection, Marie Laveau) has developed a full menu that complements the bar's concept. Among the dishes that are expected to become hits, we recommend trying: beef tartare with Hollandaise sauce and papad chips (550 rubles), a salad of vegetables roasted on salt, marinated mushrooms, and a honey-mustard dressing (380 rubles), a steak salad with a herb and almond sauce, marinated onions, and avocado (950 rubles), chicken baked with tahini sauce and vegetables (650 rubles), and for dessert, a passion fruit sabayon with sweet potato and coconut (480 rubles).

"When developing the menu for Door 2310, I used all my accumulated experience and the expertise I gained in France in selecting herbs and spices. All the dishes are made with simple but well-composed ingredients, with my own unique touch," notes head chef Yegor Yermakov.

Door 2310 has a capacity of 50 guests in the main area and 10 at the bar. The interior design was created by Maria Pleshakova. The space is divided into two zones: a bistro and a bar. The bistro area features low seating and sofas, with sconces on the walls and live plants on the window sills. The bar area has a lounge area with armchairs, semi-bar tables by the windows, a round marble table for larger groups, and, of course, the bar itself is a central element. The marble floor is complemented by veneered panels, mirrors, and glossy enameled surfaces. Chrome, wood, and brick from the historical arches are the main materials used in the interior. Most of the furniture was custom-made by Russian manufacturers, while a few vintage pieces of furniture and lighting were imported from Italy and Spain.

Door 2310 is an atmospheric place where everyone can relax, socialize with friends, enjoy a delicious cocktail, and pair it with a signature dish from the menu.
