ABOUT THE RESTAURANT CUT, a meat-focused restaurant on Bolshaya Nikitskaya Street, is a new project from the il Forno Group and Genrikh Karpin. Following the success of 800C Contemporary Steak, the restaurateur has continued to develop the "meat" theme in Moscow. Alexander Borzenko (Craft Kitchen, previously worked with Glen Ballis) has been appointed as the head chef. The restaurant's concept centers around steaks and dishes made from classic and alternative cuts of meat sourced from domestic farms, dry-aged and wet-aged, cooked in our signature ovens at 800 degrees Celsius. The "STEAKS" section of the menu offers guests pre-designed combinations for lunch or dinner – meat, side dish, and sauce. There is also a "STEAK SALADS" section, featuring hearty salads with steak, expertly cut by the chef. The restaurateur and chef have introduced several dishes to the menu of this new meat-focused project that will be prepared in front of the guests, such as thinly sliced beef tenderloin that will be seared just before serving. A separate section of the menu features dishes with raclette made from Swiss cheese. The combination of cheese and meat – steak, cheese, and vegetables, cheese and shrimp, and even cheese and a sweet berry flambé – pairs perfectly with wine. In addition to the main menu, CUT offers a selection of cured ham and tapas-style snacks for wine pairings. The CUT menu boasts a wide selection of burgers, served on signature brioche buns or in lettuce wraps with various ingredients. In addition to the classic, Italian, and Mexican options, there are burgers with salmon tataki and beef carpaccio. Alongside the main menu, CUT offers a breakfast menu throughout the day. The wine list at CUT is concise but comprehensive and dynamic, featuring both classic wines from various suppliers and trendy natural and biodynamic wines from all over the world. The selection is regularly updated, and most of the wines are available by the glass.
