About
A renowned "gastrobotanist," he creates cuisine centered around flowers and herbs. Andrey experiments with new flavor profiles, focusing on the unusual combination of vegetables, herbs, and flowers with meat and seafood delicacies. He worked for many years in the south of Russia, then moved to Moscow, where he headed the Modus restaurant and worked on the project for two years. Throughout his life, cities and circumstances change, but one thing remains constant: his passion for gastrobotany. Andrey has interned at the restaurants Noma (2 Michelin stars, chef René Redzepi) and Geranium (3 Michelin stars, chef Rasmus Kofoed), and is now actively developing this culinary direction in Russia. He then became the head chef at the gastropub Blush, where he successfully combined gastrobotany with wine. At the beginning of his career, he was inspired by the Spanish chef Rodrigo de la Calle, whose restaurant was twice featured in the Michelin Guide's Red Guide. Later, Andrey completed internships at the famous restaurants Noma and Geranium. In 2017, he participated in the Moscow food festival "Taste of Moscow," where he presented a culinary show and revealed the secrets of the "cuisine of flowers and herbs" philosophy. Since 2007, he has been a member of the North Caucasian Association of Chefs, and since 2009, a member of the Federation of Professional Chefs and Confectioners of Russia. He is the winner of the International Culinary Championship of Southern Europe – 2013, the best chef in the Stavropol region – 2010, according to the regional competition "Trade, Public Catering and Household Services of the New Millennium," the bronze medalist of the Russian Culinary and Service Championship – 2010, and the International Culinary Cup of the Kremlin – 2009. In 2019, he organized a six-handed dinner with the Purcell twins, who earned 3 Michelin stars for their restaurant. In 2021, he headed his first authorial project – the L.E.S. restaurant on Tverskaya Street. That same year, the L.E.S. restaurant was included in the Michelin Guide, and in 2022, it became the recipient of the Golden Palm Branch award in the restaurant industry. In the summer of 2022, he became the brand chef of the Gazprom Mountain Tourism Complex. Chef of the Year award at the "Best in the Industry" awards in 2023. Since 2024, he is the head chef of the "Dr. Zhivago" restaurant in Moscow.
