Alexander Kubyshev was born and raised in Moscow. He began his career in the hospitality industry in 2015, and in the spring of 2023, he joined the team of restaurateur Genrikh Karpin. In February 2025, he became the head pastry chef at the upscale restaurant LEO in Khamovniki.

Previously, Alexander worked on projects including "Biblioteka," The Rink, Forum, Skolkovo Golf Club, Assunta Madre, and Donna Margarita. In his work, he prefers to use ingredients and techniques that are timeless and transcend trends. A distinctive feature of Kubyshev's desserts is the small amount of sugar used and the balanced flavors presented in a minimalist style. The head pastry chef particularly enjoys working with ice cream, considering it a versatile addition to any dessert: ice cream refreshes the palate, counteracts excessive richness, and adds a new texture to the flavor.

A perfectionist, he is always striving to create something new. He finds inspiration in his travels.
