If you’re keen to take your tastebuds on a culinary journey, Quimbaya provides the perfect opportunity, thanks to chef Edwin Rodríguez’s ability to recreate the flavours of his native Colombia, the birthplace of the movement known as Magic Realism.This restaurant, which takes its name from an indigenous native tribe famous for its gold craftsmanship, features a small bar displaying a superb array of Colombian spirits, and a minimalist dining room with an open-view kitchen where guests can interact with the chefs at work. The cuisine here is based around three tasting menus: Clásicos Q (offering their most iconic dishes, with the option to choose according to your tastes), the so-called Experiencia QUIMBAYA (a trip to the living memory of Colombia) and, finally, the Gran Menú QUIMBAYA, its maximum expression of Colombianness to thrill our souls, with the inclusion of delicious bites and some other key dishes.
