ULLU is a family-style restaurant serving modern Caucasian cuisine in Ramenki.

A new project from the "Dain" restaurant group (The Bassein, FineDine Catering, Villa, Asiati Bistro, "Chef Buffet", "Atmosphere") has appeared on the gastronomic map of the capital: ULLU, a family-style restaurant offering modern Caucasian cuisine. The name is borrowed from the sacred mountain of Ullu-Tau in the Adyr-Su gorge, Kabardino-Balkaria. According to legend, the Mother Mountain gave birth to the first people. Its rocky gorges are like the folds of a dress, and its snowy peaks are the silver of wisdom. For centuries, Ullu-Tau has been considered a place where wishes come true. In the interior of ULLU, ethnic motifs are given a modern twist, and every detail is carefully considered. The rooms are filled with light and decorated in warm pastel shades. Live trees, natural wood, stone, and clay set the tone for the design, and the tableware seems to have been brought directly from a Caucasian home: copper dishes, prints from Turkey and the Caucasus, many items are handmade, and it is almost impossible to find two identical plates. The open kitchen and, of course, the wood-fired oven take center stage in the restaurant. At ULLU, the oven is fired exactly as it has been for centuries in the East and the Caucasus: the heat comes from all sides, the baking "cooks" properly, quickly and evenly, acquiring a golden crust and that unique smoky aroma that is unlike anything else. The head chef, Mark Shah Akbar, is responsible for the kitchen. In his signature menu, he combines the age-old traditions of the North Caucasus with the nuances of Levantine cuisine. Chef Akbar offers ULLU guests dishes such as chudu with fresh herbs and authentic cheeses, mutabal with pomegranate and chervil, traditional layered khinkali with shredded veal, kurze with veal and tarragon, lamb kebab with mint hummus and farm-fresh yogurt, lahmajun with minced meat and aromatic spices, and much more. The wine list at ULLU is curated with an emphasis on variety and originality: alongside classic wines from the Old and New Worlds, you will find unique selections from wineries in Russia and Georgia. Caucasian cuisine is more than just food; it is a culture, a history, and the warmth of a family hearth, which is fully reflected in ULLU.
