Milan in the Heart of Moscow: The ToMi Negroni Bar Located in the heart of Moscow at 27/14 Malaya Bronnaya Street, the new ToMi bar from Fitz Gastro Project* offers a taste of Milan. Here, the spirit of Milan is evident in every detail, Italian cocktail culture is reimagined, and the philosophy of "dolce far niente" (the sweetness of doing nothing) becomes a part of the Moscow experience. The mid-20th century in Italy – a time when locals would leisurely sip Americanos on the terraces of cafes in Florence and Rome, discussing Fellini and Pasolini's masterpieces and the latest collections from Schiaparelli. It was during this era that "dolce far niente" became a manifesto for aesthetes. The ability to savor the moment, spending a warm afternoon with a glass of vermouth, transforming dinner into a ritual, and a walk into an act of contemplation, became a true art. This atmosphere is the foundation of the ToMi concept. The bar's interior is the work of S+S Studio (Sundukovy Sisters). The sisters created a space that is a modern interpretation of Milanese "everyday chic." Every detail is imbued with meaning: a synthesis of Italian Art Nouveau and modern boldness. During the day, the atmosphere is light and reminiscent of an aperitivo, while in the evening, the bar transforms – rich colors, dynamic lighting, and reflections create a vibrant negroni bar, pulsating with the rhythm of Milan at night. The name ToMi is more than just a reference to the famous Milano-Torino cocktail (the progenitor of the negroni) and the cycling race of the same name. It's a play on words and meanings: a reinterpretation of cocktail traditions, an attempt to look at classics from a new perspective. This is a concept where head bartender Roman Morozov feels at home. He has created a cocktail menu that features negronis in both familiar and completely unexpected variations. Torino Hedonism is a complex, multi-layered interpretation of the classic, with notes of vanilla, peach, bitterness from vermouth blends, and more. Milano Hedonism is an experiment with ultrasonic extraction, giving the drink the flavor of fresh raspberries. Pistachio Negroni is a true pistachio flavor without any artificial aromas, a velvety and rounded cocktail. Nitro Caffe Negroni is a cocktail with cold brew, white bitter, and limoncello, infused with nitrogen and served like a stout. It's both an homage to Italian coffee shops and a nod to futuristic cocktail classics. However, ToMi is not limited to just negroni variations. The cocktail menu also includes other hits: the vintage Lucien Gaudin with a subtle orange bitter, the invigorating Boulevardier with vanilla bourbon notes, the playful Rossini Spritz based on strawberry water and prosecco. Here, they understand that Italian cocktail culture is about the mood, the ritual, and the leisurely pace of life. The cuisine at ToMi is a natural extension of the cocktail concept. Chef Alexander Yermakov treats bar food as a form of haute cuisine. His dishes are not just accompaniments to drinks, but a complete gastronomic experience. Shrimp carpaccio with yuzu-koshi, marble beef tartare with lacto-fermented white mushrooms, raw scallops from Sakhalin with tomato water and kimchi powder – dishes built on nuances and textures. Italian polenta is not a side dish here, but a main course: carefully pressed, it is pan-fried and served with mascarpone, Kamchatka crab, and Parmesan. The pasta is made entirely by hand. Ptitim with pesto and octopus, tagliarini with truffle – examples of elegant simplicity, where each ingredient works in harmony. The final touch is the negroni-tiramisu dessert, a true hymn to the iconic cocktail: rich but surprisingly light. ToMi is more than just a trendy bar, it's Milan reimagined and integrated into the context of Moscow. It's a place for those who appreciate attention to detail. It's here, among glasses, antipasti, and the aromas of citrus, that a journey into the world of true pleasure begins.
