The restaurant's atmosphere is indeed intimate: the space is designed for fifty-six guests, so from almost any seat, you can observe the work of the open sushi bar, where sushi, rolls, and sashimi are prepared. The menu features classic dishes and popular dishes from the cuisine of the Land of the Rising Sun. The main focus is on fresh fish and seafood. There are twelve types of sashimi and thirteen types of sushi to suit every taste. You can find toro, shima-ji, suzuki, hamachi, octopus, uni, and more. In addition, the menu offers a wide selection of hand rolls, as well as regular rolls. You can also opt for a traditional approach and start your meal with an appetizer, such as seared scallops, which are very popular in Japan. Follow it with a salad of bluefin tuna in a tomato sauce with kai-so. For the main course, try the bavette steak with corn, or order "chirashi" – rice with slightly seared salmon, spicy sauce, and red caviar.
The interior of SHIBA embodies the values of Japan – minimalism, restraint, and elegance. A striking color accent in the interior is a red circle, which symbolizes not only the flag of the country but also the ancient symbol "enso," meaning "the appearance of reality," which is the most popular symbol in Japan.
Makhar Tsoy, the brand chef of SHIBA, has been exploring Japanese cuisine for a long time. Since the restaurant's opening on Patriarch's Ponds, Makhar has repeatedly revised and supplemented the menu, striving for balance so that the beloved Asian classics can coexist with his own discoveries and creations. In gastronomy, Makhar adheres to minimalism, preferring ingredients of impeccable quality – for example, the chef orders fish for the restaurants from Japan – and subtle combinations of flavors.
