About
ROZÉ & Dance, a wine restaurant with an extensive selection of rosé and sparkling wines, and a fine-dining menu with a focus on healthy living, has opened its doors near the Fontanka River embankment at 13 Inzhenernaya Street in St. Petersburg.
The new restaurant, created by Anastasia Ryboltova (Mentano Cafe, the "A Winter's Night" charity project), aims to bring together aesthetes, hedonists, and bon vivants who appreciate not only fun but also the importance of taking care of their bodies and minds. Anastasia, known for her diverse and unique projects, has invited Chef Ulyana Suzdalkina to St. Petersburg to create a fine-dining menu with a healthy twist, which will complement the restaurant's extensive collection of rosé and sparkling wines.
At ROZÉ & Dance, Ulyana takes a fresh approach to classic French techniques, sauces, and ingredients, creating dishes that are light, airy, and designed to pair perfectly with rosé wines. She emphasizes local ingredients and simple combinations, adding a touch of playfulness to the presentation and overall concept of the menu.
The ROZÉ & Dance menu features a variety of appetizers, including caviar (sturgeon, trout, or pike, starting at 200 rubles), served with mille-feuille, and a raw bar. The raw bar offers dishes such as nelma (Arctic char) with wild herbs (800 rubles), sea bass with citronette and black garlic (1050 rubles), whitefish with a tomato and pistachio vinaigrette (950 rubles), and dry-aged beef tartare with French fries (1200 rubles).
The salad section includes seasonal vegetables, le rib (550 rubles), tuna with egg yolk cream, green beans, and herbs (1450 rubles), duck liver pâté with rosé jelly (900 rubles), and a large green salad, prepared with radishes and almonds (780 rubles).
Hot appetizers include baked Camembert with lavender honey and crackling (1100 rubles), crab puffs with mango aioli (1250 rubles), and a croissant with crème brûlée and foie gras (750 rubles). The soup selection includes a Pugachev-style okroshka (780 rubles), "Leningrad" soup with white and red fish and scallops (890 rubles), and butter soup with beef short ribs (900 rubles).
The main courses are playful and inspired by French cuisine, featuring dishes such as cauliflower with shallot cream and champagne (600 rubles), calamari with smoked cashew mousse (750 rubles), Rockefeller-style snails (600 rubles), and mashed potatoes with a Wagyu bacon demi-glace (650 rubles). Fish and seafood options include grilled dorade with seasonal vegetables (1700 rubles) and pike perch with a root vegetable gratin (1100 rubles). Meat and poultry dishes include a vol-au-vent with foie gras (850 rubles), beef tenderloin with duxelles and spinach (1890 rubles), and a large Tomahawk steak for two, served with a mixed green salad (5800 rubles).
The desserts at ROZÉ & Dance are equally playful and light, featuring dishes such as Gruyère and blueberry meringue (700 rubles), chocolate mousse with biscuit and basil (550 rubles), sabayon with rum brioche (650 rubles), and a Claude Monet-inspired honey cake (600 rubles).
The wine list, curated by sommelier Dmitry Bogdanov, features 160 labels, with a focus on rosé wines and sparkling wines. In addition to a wide selection of French, Spanish, Austrian, Russian, and even Lebanese rosé wines, the restaurant offers the opportunity to purchase bottles or sample wines by the glass, and to learn about the history of each variety. The sommelier's recommendations are provided for each dish on the menu.
The head bartenders, Evgeny Yushkin (Meat_Coin, Chaihona №1 VASILCHUKÍ) and Maxim Yurkin ("Sol" Kitchen & Bar, Gazgolder), have created a menu of 15 vibrant, seasonal cocktails. For those seeking something unique and sophisticated, the Pomegranate Sour (700 rubles), made with gin and a pomegranate and raspberry cordial, is served in a bird-shaped glass on a long stem, making it a perfect photo opportunity. The menu also includes cocktails made with plant-based milk, such as Banana and Strawberry Milk Punch, served in a jellyfish-shaped glass with an aroma bubble (700 rubles each). The signature ROZÉ cocktail (900 rubles) is a memorable blend of berries, strawberries, and rosé sparkling wine, and is served with a performance. There are also three sets of shots for four people: pineapple with baijiu on strawberries, watermelon with aloe jam, and passion fruit-vanilla on rum (700 rubles per set).
On Fridays and Saturdays, dinner at ROZÉ & Dance turns into a party with well-known DJs and performers, creating a fun and upbeat atmosphere. The evening is accompanied by dancing and the serving of magnum bottles of rosé by caviars!
The restaurant's minimalist interior combines simplicity and elegance. Designer Marina Goldenberg (Detali design school, Moscow; KLC design school, London) created a modern, relaxed French chic atmosphere, using natural materials and earthy tones in the decor. The two main dining rooms, with their warm lighting and mirrored surfaces, create a sense of community, while a separate, intimate room provides a more private setting for celebrations. Guests will also appreciate the stylish photo booth, which allows them to create unique content for social media. The staff's stylish uniforms were designed and created by the project's founder.
