A Russian cuisine restaurant from Duo Band, where a modern mosaic is built upon a traditional foundation, like a sourdough starter.
"Peremena" is a new project from Duo Band, located at 18 Petrogradskaya Naberezhnaya, near the Sampsonievsky Bridge. The menu offers a unique interpretation of Russian cuisine, maintaining its familiar elements while adding new flavors and emotions. They take classic dishes like dumplings, borscht, and pancakes, along with northern fish, game, berries, and grains, and use them as a foundation to create a modern culinary experience. From domestic seafood, they prepare a forshmak made with smoked Murmansk salmon and Black Sea flounder with mussels. The meat dishes include rabbit kidneys in port wine and beef ribs with pearl barley, white mushrooms, and malt. The beef tartare is served with a sauce made from kvass, and the layered pie features buzhenina (cured pork belly) and horseradish ice cream – a testament to Duo Band's constant pursuit of creative innovation. Another highlight is their complex desserts, where cheesecake is paired with chamomile, and a soufflé is flavored with dill. In October, breakfast will be introduced, a significant addition to the restaurant's diverse menu. This will include a variety of cereals, egg dishes, and, of course, fried sausage, but with a Duo Band twist: truffle and floral honey. Fresh croissants are baked daily in the restaurant's own bakery. The bar features innovative mixology, with cocktails made with birch sap, lingonberries, sea buckthorn, and cranberries. Classic cocktails are given a unique twist, such as a Porn Star Martini with sea buckthorn, and original creations like a kvass-tonic. The wine list boasts 300 labels, featuring both classic wines from around the world and key domestic producers. "Peremena" is a special restaurant for Duo Band. The original concept for Duo's first gastrobar was to make author cuisine accessible, as an alternative to the monotonous menus featuring borscht, carbonara, and Caesar salad. After 12 years, it's ironic to note that they haven't completely abandoned their roots: now they're opening a restaurant dedicated to borscht and cutlets, but with the aim of bringing a new dimension to gastronomy and expanding both their own capabilities and the palates of their guests. The interior design was created by the APAA studio, led by Alexey Peniuk and Anastasia Artemieva, the architectural firm responsible for Duo Band's establishments. The interior features high ceilings with arches, plenty of natural light, minimal decorative elements, and, as always, an open kitchen and contemporary art. "The word 'Peremena' (change) is multifaceted for us," explains Dmitry Blinov, who named the restaurant. "It evokes a sense of nostalgia, as a school break is a happy time when you can relax and run around the hallways. It's like a quiet hour, but even better! Don't we all need that respite from worries in our adult lives? But we also need change in the literal sense – as a guarantee of development and evolution. Just yesterday, we wanted to serve ceviche and bisque, and today we're figuring out how to make borscht and cutlets interesting and unique, in the style of Duo Band."
