PáDRE KHINKALI – an Italian-Georgian bistro located in the Brusnitsyn Cultural Quarter on Vasilyevsky Island.
At PáDRE KHINKALI, the traditions of two countries intertwine, with every element imbued with the spirit of both cultures, creating an atmosphere of warmth and hospitality. The interior design pays attention to every detail, with careful selection of colors, furniture, and antiques. Many items were brought from Georgia. The main colors are warm terracotta and olive green, the latter symbolizing harmony. The walls are adorned with photographs of the team and photos by Anna Gribovich, a friend of the bistro. Anna has lived in Italy for many years and focuses on photographing families of farmers, who have been cultivating their own orchards for three generations. The bistro's walls also feature reproductions of paintings by the Georgian artist Niko Pirosmani, whose works evoke the atmosphere of Tbilisi's evening streets. Two large olives in the center of the room also draw attention. Another interesting detail is the image of a churchkhela (a traditional Georgian candy) on the wall, although you might not recognize it without a little help. The wine list is an extension of the interior and traditions, and wine is the main beverage at the bistro, which the team treats with great care. The focus is on excellent Italian wines, but Georgian wines are also well-represented. There are also worthy examples from the Old and New Worlds. Artem Shmonin developed and created the cocktail menu for PáDRE KHINKALI. The team independently curated the selection of aperitifs, digestifs, and spirits. Evgeny Daldin heads the kitchen and created the menu. The dishes on the menu also reflect the symbiosis of the two countries, with a fusion style that combines respect for tradition with innovative cuisine. The familiar khinkali (dumplings) are served in a mini format and come with sauce, some of which are meant to be eaten only with a spoon. And believe it or not, you'll eat them with the "tail"! Dolma (stuffed grape leaves) is prepared with duck and black truffle, and the orzo pasta is served with slow-cooked lamb. PáDRE KHINKALI is a place where culture, the art of communication, and new discoveries are valued. It's a place for families, friends, large groups, and for quiet moments of reflection.
