A revived, legendary Leningrad bakery offering classic pastries made with dough based on the historical "Minutka" recipe, along with other baked goods.

The idea to revive the legendary bakery came from producer Artem Balashov, inspired by Lev Lurie's book "Leningrad of Dovlatov: A Historical Guide," where the renowned St. Petersburg historian recalls: "At the address 'Nevsky Prospekt, 20,' the most delicious pastries in the USSR were sold for 6-11 kopecks, with various fillings (meat, fish, blueberries, carrots, rice, and eggs), baked and fried, as well as boiled eggs, broth in a glass, tea, and coffee. The genre of the bakery (like the "pyshechnaya," a donut shop) is specifically Leningrad. Bakeries were located on the corner of Sadovaya and Dzerzhinsky (now Gorokhovaya), in Kolomna, on Turgenev Square, on Ligovka, near the Moscow Railway Station, on Sadovaya, opposite the "Passage" shopping arcade, on the Suburban Avenue, but "Minutka" was the main bakery in the city."

The bakery's menu is divided into four sections: reimagined classics, signature "minutka" pastries, a section of sweet treats, and original special offers.

Reimagined Classics: According to Maxim Babich, "For this project, I found a dough recipe – a sourdough method from 1954, which was used to bake pastries in that historical "Minutka." This recipe will form the basis of our classic pastries and continue the best culinary traditions of St. Petersburg for residents and visitors of the city." Menu excerpts: pastries with shredded beef; with cabbage and trout with cream cheese; with potatoes, eggs, herbs, and jalapeno; with rice and salmon rillette.

Signature "Minutka" Pastries: Pastries made with a yeast-free dough, using a minimal amount of oil, with a thin, crispy crust and a generous filling. They are baked and eaten in just one minute! Menu excerpts: Spanish pastry with slow-cooked beef tail; cheese pastry with Brie and Suluguni.

Sweet Treats: This section includes donuts, "vatrushki" (a type of open-faced pie), and the famous Leningrad "pyshechki" (a type of donut) in a modern interpretation. Menu excerpts: donut with chocolate ganache, hazelnut praline, and waffle crumbs; "tiramisu" "vatrushka"; "pyshechki" with berry jam and raspberry powder.
