Layerz Bakery – a bakery with an Australian vibe, created by renowned Australians Tom Halpin and Glen Ballis.

Layerz Bakery is a popular spot in Moscow, where you can always find the perfect sourdough bread with a perfectly crispy crust, croissants, trendy muffins, and other pastries. They also serve excellent specialty coffee, prepare incredibly satisfying sandwiches, and offer a classic Basque cheesecake.

The bakery's story began with a passion for bread and baking. After the end of the lockdown, Tom Halpin and Glen Ballis (from Lucky Group, Novikov Group, and others) met for coffee and realized that the city (and they themselves) were missing a space with that cozy, familiar vibe they experienced in Australia: a place where fresh bread and pastries are served to guests in a warm atmosphere, with a smile, without any formality in the conversation, and without any dress codes.

The first phase of Layerz Bakery was a B2B operation. Three years ago, a bakery called Layerz Bakery opened in a cozy space on Novoslobodskaya Street, and from there, it still supplies over three hundred restaurants in Moscow (including Lucky Group, the Metropol Hotel, CuttaCutta, Gimpel, and others).

Freshly baked bread is always on display in the window, and you can see the bakers at work through the open space, watching them pull baguettes straight from the oven and observing the daily life of the bakery. You can also watch the croissants being made in the open kitchen, where the temperature is always kept cool. The shelves are stocked with brioche, Japanese toast bread (so soft it feels like a cloud), ciabatta, the beloved Borodinsky bread, and a variety of sourdough breads.

But the main attraction is the glass display case, filled with pastries of all kinds. Glen and Tom have created a new format – everything is made with a unique personality, often in different shapes, because it's made with great care by hand, but it's always delicious. There are classics like fluffy croissants with a nearly melting center and a crispy crust (120 rubles), trendy Danish-style pastries with fresh berries or pistachio muffins (315 rubles each), and elegant (but equally fluffy) pastries like shu with matcha or blackcurrant (295 rubles). Or, there's the signature Basque cheesecake with a slightly burnt crust (350 rubles). And soon, a new selection of pastries from around the world will be introduced monthly, with "Layerz around the world" featuring different countries and continents. It's worth traveling from other cities, let alone from the other side of Moscow, for that.

In addition to pastries, Layerz Bakery also serves hearty breakfasts. For example, a croissant can be filled with scrambled eggs, spinach, and cheddar (290 rubles), or a toasted grain bread can be topped with pastrami (350 rubles). A key feature of any Australian establishment is, of course, the coffee. Since its opening, Layerz Bakery has been serving specialty coffee, carefully selected by the owners, and a coffee roasting facility will soon be added to the bakery. Currently, they offer a filter coffee with subtle chocolate notes or a bright acidity (90 rubles), a typically Australian flat white (220 rubles), and other coffee classics.

The interior reflects the friendly concept. Glen and Tom personally visited dozens of flea markets, exhibitions, small workshops, and vintage shops to find recycled furniture that would give their creation its own unique style. Each cup in your hand has its own story. Every poster on the wall has its own meaning: they represent the favorite movies of the bakery's founders, Glen and Tom.

Whether you're coming for a romantic date, a business meeting without unnecessary formalities, a family celebration with a cheesecake at the center of the table, or just to grab a coffee and a croissant, everyone is welcome. But if you prefer to stay home, the bakery offers delivery, bringing the freshest pastries in the city right to your door!
