The core values of the project include the careful development of wine culture and the art of pairing dishes with wine, the highest quality of ingredients and service, respect for the stunning natural environment and the unique traditions of the region. The creator and head chef of the restaurant, Vyacheslav Galkin, not only has a deep understanding of global culinary trends but is also deeply rooted in the history of his homeland. It's no coincidence that his father is a renowned local historian and the founder of the local branch of the Russian Geographical Society, whose headquarters are located right here, in the "Dynastia" complex. A charming symbol of the restaurant is the friendly husky, Baron, who greets guests every day at the entrance and vigilantly protects their peaceful relaxation. This year, Baron's image has appeared on the restaurant's logo. The interior of "Dynastia" strikes a delicate balance between the elegance of a traditional establishment with history and the cozy atmosphere of a welcoming country home. The design features a traditional Alpine style with an abundance of natural materials and motifs. Wood is extensively used in the decor, comfortable chairs are upholstered in reddish-brown leather, unique tables are made from cross-sections of ancient chestnut trees, and the lampshades resemble giant pine cones. Panoramic windows offer breathtaking views of the Achishkho mountain range. On sunny days, the tables on the spacious summer terrace are particularly appealing, where you can fully enjoy the crystal-clear mountain air and the warmth of the southern sun. Vyacheslav Galkin is a true enthusiast of his craft, who has thoroughly studied the experience of the world's leading culinary centers. He dedicates a significant amount of time to selecting high-quality ingredients and creating his own culinary masterpieces based on recipes brought back from his travels. The chef compares food to a melody that gradually reveals all its beauty and nuances to the guest. At the same time, Vyacheslav is a knowledgeable and discerning wine connoisseur, tasting approximately a thousand varieties of this noble beverage each year. He has managed to assemble an exclusive collection in the restaurant, which delights even the most sophisticated gourmets. But the greatest pleasure for the chef is to find the perfect enogastronomic pairing, where the dish and the drink fully complement and enhance each other's flavors. The menu features dishes such as venison tartare on brioche, a beet salad with smoked Adler trout, the legendary borscht served with a shot of Borodinsky vodka, and Tom Kha soup with crab meat. There's also a shepherd's pie with game, pasta with shrimp in a tomato sauce, chashu with mandarin velouté, and marinated venison with cooked barley. Grilled dishes include Wagyu steak and milk-fed veal.
