"Honest Fish" is a Moscow-based chain of seafood bars that has set a trend for premium seafood at fair prices, making it accessible even outside the Moscow Ring Road. Continuing to promote Russian seafood, the project team is trying a new format for itself: an open-kitchen concept in the "Luchi" residential complex! In this new location in a residential area, customers can watch chefs open fresh scallops and oysters (which are priced from 90 rubles per piece), and observe the preparation of rolls, tartares, and sushi. Customers can receive their orders either through delivery or by picking them up themselves, even in their slippers.
Five years ago, no one believed that oysters would be eaten in residential areas, or that people would come in their slippers to buy premium seafood. "Honest Fish" broke the stereotype of seafood being an elite product and started selling sea urchins, oysters, and scallops for as little as 90 rubles per piece, even outside the Moscow Ring Road. The project was a success and gained a loyal following. The suppliers of "Honest Fish" bring products from all over Russia, from Murmansk salmon and sea urchins to Sakhalin scallops and Kamchatka crab. The team regularly experiments, giving familiar fish a new twist, resulting in dishes like salmon rolls, herring tartare, seared scallops, and more.
Currently, "Honest Fish" generates over 200 million rubles in revenue, with 150,000 oysters, over 12 tons of chilled salmon, and 4 tons of "honest" fish soup sold in 2023. The company also has three seafood bars, with a flagship location on New Arbat Avenue in the "Oktyabr" cinema, and its own delivery service. The restaurant owners plan to open the largest restaurant with 200 seats this year, as well as expand the delivery zone so that all Moscow residents can try premium seafood at fair prices.
The "Honest Fish" open-kitchen has already been included in the tour of the "VII Restaurant Economic Forum" organized by "Restaurant Vedomosti," where the team honestly shared the workings of this unusual factory-kitchen with restaurateurs from the capital and other regions.
