Carbonara is a restaurant that has opened on the site of the oldest Italian restaurant in Yekaterinburg, dating back 115 years.
Chef Giuseppe Davi is Italian, and his restaurants have been recognized by the Michelin Guide and the Gambero Rosso. The restaurant uses Italian products and delicacies, fish from the Mediterranean Sea, and serves Neapolitan pizza, signature pasta dishes, homemade ice cream, and cannoli made according to the chef's family recipes. You can also enjoy Italian cocktails and the largest Italian wine list in Yekaterinburg. In the evenings, five days a week, the musical group La Banda Carbonara creates a festive Italian atmosphere. In 1910, "Venezia," likely the first Italian restaurant in Yekaterinburg, opened on the site of the restaurant's current entrance, on what was then Uspenskaya Street (now Vainer Street). Today, a small exhibition is located on the main staircase, featuring advertising publications of the "Venezia" restaurant in Yekaterinburg newspapers, restaurant tableware, and photographs of prominent citizens who frequented establishments in Yekaterinburg at that time. Carbonara is the oldest and largest Italian restaurant in Yekaterinburg. Today, it proudly continues the history that began 115 years ago. Chef Giuseppe Davi was born in northern Italy, but spent every summer with his grandmother in Sicily. Giuseppe says, "Simplicity is our philosophy." He combines traditional Sicilian home cooking with modern Italian cuisine. The chef prioritizes the quality of ingredients and simple, yet perfect, recipes. His Moscow restaurant, "The Butler," located on Patriarch's Ponds, is recommended by the Michelin Guide and the prestigious Italian guide, Gambero Rosso. At Carbonara, as in Moscow, Giuseppe will host dinners several times a year featuring signature dishes made with seasonal ingredients, which can be booked in advance. Giuseppe is known for his ability to source the best ingredients for an Italian restaurant in Russia. For many years, he has offered the best red shrimp, artichokes, truffle pasta, and, of course, traditional "grandmother's" recipes – cannoli and creamy ice cream. All of this is now available in Yekaterinburg. The Carbonara bar features classic Italian cocktails such as Bellini, Negroni, Garibaldi, and Spritz. Several popular cocktails are also available in non-alcoholic versions. Some are served in special glasses in the style of Sicilian painted ceramics. The digestifs include homemade limoncello and a special collection of Italian vermouths and liqueurs. The Carbonara wine list features over 35 wines available by the glass, and a collection of over 250 wines from the main wine regions of Italy and other countries. This collection was assembled over approximately 10 years by Alexei Dubovkin and Sergey Cherapanov, the best sommeliers in the Urals, according to the WTE award. The list includes many rare wines that are no longer imported, and it is believed to be one of the largest and most valuable wine lists in Russia.
