BISTROT on Bolshoy Savvinsky Lane: A Realization of the Italian Dream

The fate of the iconic Bistrot, opened by Kirill Gusev in the "Moscow Silk" business district in 2007, has been a subject of interest for many. Now, it is in the capable hands of restaurateur Svetlana Drobot, who, with respect for the history of the place and a careful approach, will focus on the further development of the project.

Inspired by the famous restaurant of the same name in the fashionable Tuscan town of Forte dei Marmi, where the historic villas are filled during the season with representatives of aristocratic Italian families, renowned artists, performers, and simply wealthy and beautiful people, it occupies a two-story mansion on Bolshoy Savvinsky Lane.

Everything here is reminiscent of a Tuscan home – a place with history and atmosphere, where time seems to slow down, allowing you to savor every moment. The space, covering approximately 600 square meters, features three elegant halls designed by renowned designers Alexandra Vertinskaya and Elena Lazarenko, and a luxurious patio with a Mediterranean fountain. The oak cabinets and buffets, low wooden tables, and comfortable armchairs, the exquisite candle holders and lamps – everything, from the furniture to the interior details, has been brought from different regions of Italy, creating a feeling of warmth and comfort, like a real home.

With the arrival of warmer weather, the restaurant opens its doors to a sun-drenched and recently renovated veranda in the Mediterranean style, designed by Valeriy Lizunov and his Archpoint studio. Particular attention was paid to updating the space and the details that make it even more appealing to guests. The light colors – snow-white tablecloths and awnings reminiscent of sailboat sails, wicker furniture, and terracotta planters – harmoniously emphasize the beauty of the natural materials in the interior and create a wonderful contrast with the view of the cozy courtyard and fountain.

The traditional Tuscan cuisine is still overseen by Italian chef Alessio Gini, who, during his 17 years in Russia, has proven himself to be both a talented chef and the creator of successful gastronomic concepts. He opened the first Italian restaurant in Moscow for Ginza Project, the food court in the "Tsvetnoy" department store, and the international culinary studio Culinaryon, and has been managing the kitchen at BISTROT for two years.

The "Chef's Recommendations" section includes dishes such as carpaccio of marble beef, "Margherita" pizza on a thin crust, octopus prepared in the Mediterranean style, ravioli with shrimp, and Neapolitan pasta with seafood from the oven. Old-school? No, it's beloved Italian classics! By the way, most of the dishes are prepared in the oven located in the mansion on Bolshoy Savvinsky Lane. Dishes like roasted lamb with potatoes "alla fornaia" or cod with Parmesan are among the top choices.

Wine is always appropriate: the carefully curated wine list, where everything is in its place, is rightfully considered one of the best in Moscow. For example, the selection of wines by the glass includes exclusively single-varietal, clear, high-quality, and elegant Rieslings, Sauvignon Blancs, Chiantis, and Pinot Noirs, which you won't find on the shelves of supermarkets. The wine list also features iconic Italian wines from Sassicaia, Ornellaia, Tignanello, and Capannelle, as well as representatives of the new wave, such as Jean-Luc Colombo and Fogliati, and top-quality Brunello wines from Cupano and Podere le Ripi. A precious part of the collection is the Burgundy selection, featuring wines from different vintages, villages, and boutique estates, which arrive in Russia only once a year. One such rare guest is Cremant de Bourgogne Origines Brut, Parigot & Richard, which presents itself in the glass as a sparkling wine.
