About
Alessio Gini was born in Verona (Veneto region, Italy). In 2006, he took a bold step – he moved to Moscow for love. This choice not only shaped his personal life but also marked the beginning of his professional journey in Russia, where his passion for gastronomy found new life, and cooking became his life's work.
Alessio's career began working alongside a chef from Milan, where he quickly became his "right-hand man." In 2008, he joined Ginza Project, where he participated in the opening of the Italian restaurant Piccolino, contributing not only to the cuisine but also to the atmosphere and design. Later, this project underwent a rebranding and became the restaurant Gini. During those years, he also developed the Pesto Café chain, known for its accessible approach, and participated in the launch of Moscow's first food market in the "Tsvetnoy" department store.
In 2012, Alessio became one of the first chefs at the international culinary studio CulinaryOn.
From 2013, for eight years, he led the restaurant division of the company "Azbuka Vkusa" as a brand chef and head of the restaurant services department. Under his leadership, the network grew from 14 to 125 projects, including cafes, bistros, restaurants, and its own catering service. During this period, he also oversaw the menu of the wine restaurant The Finch in "Moscow City."
In 2015, Alessio published the book "Italian. Gastronomic Sketches of an Italian in Russia," where he collected recipes from his native Veneto. He owns a family vineyard in Italy and produces homemade wine, so each recipe in the book is accompanied by detailed recommendations on how to choose the right beverage to complement the dish.
Since 2022, Alessio Gini has been the head chef of the legendary Italian restaurant Bistrot. Here, he continues to develop the philosophy of Italian cuisine: respect for tradition, attention to detail, and elegance in every dish.
