About

A craft bakery, carefully preserving the history of Samara, revives ancient local recipes, allowing guests to enjoy authentic sourdough bread and delicious pastries.

"Beloturka" is a craft bakery that cherishes the history of Samara. Here, traditional recipes from our region are revived, so that guests can savor genuine sourdough bread and exquisite pastries.

"Beloturka" is a variety of wheat that has been cultivated in the Samara Governorate since the early 19th century. At that time, the Samara Governorate became one of the centers of grain farming and a leader in the country in the production, sale, and processing of wheat and rye.

70% of the flour and wheat in all of Russia was produced in the Samara Governorate and supplied to 17 countries around the world!

Thanks to this, the city of Samara earned the title of "bread capital," and the baking industry began to develop.

The "Beloturka" wheat variety was highly valued and sold on the European stock exchange for a price equivalent to gold. It helped Samara merchants accumulate wealth, and they, as patrons, transformed the small county town into an industrial and cultural center.

With the "Beloturka" project, we aim to honor the history of our city, Samara, and to give everyone the opportunity to connect with it. We want to transport people, for a moment, to the vast wheat fields with the aroma of freshly baked bread, allowing them to hear the rustling of the ears of wheat and the sound of the mills.

The bakery prepares pastries and bread using traditional, historical, and original recipes created by the head baker, Lyubov Zelenykh.
