Ash

About

Ash is a restaurant inspired by Asia, featuring familiar dishes with a focus on smoking and specialties from across the Asian continent, from Japan to Israel.

Located in Moscow City, on the first floor of the "Tower on the Embankment," Ash is brought to you by the team of Armen Firjanyan (Tacobar, Knorozov Bar): Ash: inspired by Asia. Inspired by Asia, the menu features familiar dishes enhanced with Asian spices and sauces. Chef Dmitry Kishov (Tacobar) has emphasized smoking techniques and specialties from across the Asian continent, from Japan to Israel. Roasted peppers are served with a chickpea and labneh cream, sambal shrimp with zucchini noodles, striploin with glazed carrots and a muhammara sauce, and smoked meats from the BBQ section are served with various types of kimchi. A special section of the menu features a restaurant interpretation of Asian street food: a katsu sando sandwich, tomorokoshi corn, dim sum, and gyoza. The Ash bar menu features an equal selection of wine and signature cocktails based on whiskey and gin, created by head bartender Ilya Pudovkin (Knorozov Bar). The bar, as an extension of the culinary concept, uses smoke, smoking, and Asian spices in the preparation of cocktails. In the interior design, project architect Anastasia Zemlyanskaya continued the theme of the fusion of Asian cultures, restaurant dining, and street food, using a central art installation as the focal point. This installation, a street lamp with tangled coils of electrical wires, is meant to evoke associations with any Asian country. Warm wood and stone are incorporated into the interior design, adhering to the principle of "sustainability," where small details and remnants from production are used to create a beautiful mosaic, celebrating imperfection and the beauty of the moment.
