About

Pavel Koledin is a chef with over 20 years of experience in the restaurant industry. He started as a waiter and then moved to the kitchen. In 2008, he joined the restaurant group of Denis Ivanov, where he soon became the head chef of the SALT restaurant. In 2013, Pavel worked at the Le Vallon de Valrugues restaurant, owned by Marc de Passorio (1 Michelin star, France), and in 2017, he completed an extensive internship at restaurants in Madrid, including Sala de Despiese, Muta Smoking Club, and La Tasqueria de Javi Estevez (1 Michelin star). In 2022, Pavel completed an internship in St. Petersburg at one of the most renowned restaurants, Duoband – Harvest. In 2024, he completed a short-term internship at restaurants run by Michelin-starred chef Mathieu Pacco in Paris. Pavel was the driving force behind the launch of "Zhan Xuan Lu," the first izakaya-style bar in Russia. In 2017, the establishment received a silver "Palm Branch" award in the competition for the best restaurant concepts in the country. In 2019, he also launched the Krombacher Beerkitchen, a new-format beer restaurant in Moscow, which reached the finals of the "Palm Branch" restaurant concept award in 2020. In 2023, Pavel was named one of the top 7 chefs in Siberia by the annual federal "Chef of the Year" award from PIR Expo, and he also received a special award for preserving traditions within the "What to Eat in Siberia" award. In 2024, he launched the first neo-bistro in Siberia, "Zherarnia," an international project by Denis Ivanov and Gerard Depardieu.
