Throughout his professional career, Kirill has led the pastry departments of renowned restaurants such as the St. Petersburg Buddha Bar, the Jurmala-based Orizzonte, and the Latvian pastry shop Madam Brios. At "Zabyli Sahar" (Forget Sugar), Kirill elevates the concept of desserts to a new level. He promotes pastries as an art form, skillfully combining traditional techniques for both classic and unconventional desserts with an innovative approach. He uses unconventional flavor combinations, creates complex shapes, and emphasizes the natural flavors of ingredients, favoring the taste of ripe fruits and berries. Kirill possesses the skills to create sugar-free desserts, works with chocolate and caramel, prepares authentic mochi pastries, creates multi-tiered cakes of any complexity, and is actively developing his skills in baking.
The young pastry chef, Kirill Abakshev, of the "Be Well Group" team, first entered a professional kitchen in 2007 at the age of 15, starting as a kitchen assistant. At the "Zabyli Sahar" pastry shop and restaurant at One Trinity Place, the pastry chef virtuously combines the traditions of preparing classic desserts with an unconventional and innovative approach to his craft.
