About
Dmitry Makovetsky was born in Gulistan, the smallest city in Uzbekistan. However, he began his career in the capital, honing his skills in kitchens that embraced the Italian culinary tradition. After working at Porto Banus (a suburban restaurant belonging to the Gourmet Alliance chain), which was well-known in Moscow, Dmitry moved to the restaurant La Provincia. After four years of working under the direction of head chef Vladimir Kokhlov, he was appointed head chef. He accepted the offer to lead the kitchen of the MONS restaurant in the Sochi mountains, having successfully worked at La Provincia for ten years. With the opening of MONS, Dmitry began a new chapter in his professional life. The culinary focus of the MONS restaurant is "comfort food" – classic Italian dishes that are appealing in their simplicity. The chef deliberately avoids overly elaborate culinary techniques, instead prioritizing the quality of the ingredients, precise cooking methods, and a clean, balanced flavor profile.
