The hedonistic cuisine of Dabiz Muñoz is fun and irreverent in many details, and breaks the barriers of the gastronomic avant-garde to enter a highly personal dreamlike plane, inviting the diner to live a roller coaster of emotions.In his striking establishment they serve a unique tasting menu, called ‘The Kitchen of the Flying Pigs’, which takes you on a spectacular journey through the different cuisines of the world, with special emphasis on Asian fusion but with the regular use of Spanish products, which results in more recognisable flavours. Addressing issues such as invasive species or the Pyrenean ecosystem, the chef works without limitations, combining local ingredients with exotic seasonings. The experience can be complemented with a liquid menu, radical in concept and pure hedonism, which they have christened Metamorphosis!
