Following the rhythms of nature – and with a variety of preservation techniques in evidence to prolong the seasons – the original cooking showcases ingredients that are foraged from the wild or sourced from regenerative farms. Understated names such as ‘Charcoal Foam’ betray the complexity and intensity of the components within.
