"Quiet Shores" is a gastronomic highlight of this charming family estate in Gelendzhik. From the summer terrace, you can enjoy a view of a cascade of grapes of elite varieties. The restaurant values the cultural and gastronomic traditions of the southern region. This is reflected in everything, from the interior design to the menu, which is entirely based on local produce. The project's head chef is Dmitry Maksaev. He has over 20 years of experience in the kitchens of various cities in Russia and has collaborated with foreign chefs. Dmitry is a member of the "Chefs Team" Russia and elevates local cuisine to a high level. The Kuban roasted vegetable tartare with fried Adyghe cheese and smoldering rosemary is not just a ready-to-eat dish. It's a culinary "couture" creation, blending farm-fresh products, local meats, and fresh, vitamin-rich vegetables. The menu is extensive, diverse, and welcoming. Russia is a generous soul, and this is evident in the generous portion sizes and the wide variety of dishes. The themes of locality and freshness go hand in hand. The quality of all products is monitored daily, and herbs are grown directly in the restaurant on a vertical "Living Spices" hydroponic station. Local cheeses, meats, and vegetables are sourced from farmers at Kuban markets. In addition, the family estate has its own garden and greenhouses where cherries, apples, pears, peaches, sea buckthorn, and currants are grown. Not only the head chef, but also a hereditary pastry chef with 30 years of experience, Armine Muradyan, uses fruits and flowers in her creations. Thanks to her, you can enjoy coffee with a vertical honey cake, a poppy seed cake with a lemon-cheese cheesecake, and a signature dessert based on yogurt and berries on the veranda. The estate also caters to young guests. The children's room in the "Quiet Shores" restaurant is perfect for hosting celebrations and events for up to 12 people. There is also a separate room equipped with everything needed for children's entertainment, including toys, books, and board games. The trend towards local sourcing has also extended to beverages. The Black Sea coast is rich in wineries, which stretch from Gelendzhik all the way to the Crimean Peninsula. Even the Greeks produced wine in the territory of the former Bosporan Kingdom, and this beverage made from the berries of local vines was highly valued at the time. The wine list at "Quiet Shores" features the best bottles from all over Russia. A special point of pride is the elite cognac room in a retro style on the third floor. It houses the best cognacs and brandies from the surrounding regions. The shelves hold a 30-year-old "Koktebel" cognac made from authentic Crimean cognac spirits, as well as exclusive products from local farms. Here, you can sample wine, learn about the peculiarities of growing grape vines in southern Russia, and chat with the hospitable hosts. Every day, they develop the "Aderba Estate" project and the unique "Quiet Shores" restaurant, promoting the culture of Black Sea cuisine. Come and taste the sea, the herbs of the Caucasian mountains, and the fruits of the native land.
