The 312
About
The concept of the restaurant is Chicago as a cultural (and telephone) code, with the signature dishes being an Italian-American version of deep-dish pizza and Chicago-style hot dogs.
The restaurant's ideology is built around different eras of Chicago, with deep-dish pizza and American hot dogs as the main products. The name "312" refers to the telephone area code of Chicago. The creators of the project aim to recreate the atmosphere of a vibrant and gritty metropolis. In the past, Neapolitan immigrants came to the United States and contributed to the city's gastronomic culture. Chicago embraced Italian traditions, but later developed its own Italian-American version of pizza – deep-dish. It looks more like a large pie with a crispy crust, filled with creamy mozzarella and tomato sauce. This dish will be the flagship of The 312. Menu excerpts: Pizza 6 Cheeses Cheddar, stracciatella, parmesan, brie, gorgonzola, mozzarella Deep Dish 820 / Cracker 870 rubles Spicy Hawaiian Pizza Turkey breast, pineapple chunks, spicy pepperoni, mozzarella with tomato sauce Deep Dish 500 / Cracker 500 rubles Manhattan Pizza Sausage, meatballs, juicy ham, sweet pepper chutney, crispy fried onions, sweet mustard, mozzarella, tomato sauce Deep Dish 550 / Cracker 620 rubles Pepperoni Pizza Spicy pepperoni, mozzarella, tomato sauce Deep Dish 500 / Cracker 500 rubles A special section of the main menu is dedicated to hot dogs, including the legendary Chicago-style hot dogs on a poppy seed bun. Hot dogs in the United States have become a cultural phenomenon, evolving from street food to a delicacy in restaurants. The menu at The 312 features hits from different states: Menu excerpts: Texas Hot Dog Beef sausage, original chili con carne, cheddar cheese, pepperoni - 680 rubles Wisconsin Hot Dog Beef sausage, pepperoni, sriracha, barbecue sauce, cream cheese - 540 rubles The head chef is Daniil Kalyuzhin. He trained in Italy, learning the art of making Neapolitan pizza, and for the The 312 project, he adapted a deep-dish recipe from 1947, which was brought to the project creators directly from Chicago. The bar menu at The 312 is another gateway to American culture. It is visually designed as a guidebook to the central part of the metropolis, showcasing how the entire world is reflected in the cocktails that are favorites among local residents. Bar menu excerpts: Printer's Row - a creamy dessert dedicated to the printing district of Chicago - 690 rubles Chicago Bulls - a twist on the classic NY sour with a subtle honey aftertaste - 690 rubles Rush Street - the most delicate version of a dirty martini, made with a habanero pepper infusion and a roasted tomato cordial. Our tribute to Chicago's gastronomy - 690 rubles The wine list will also be focused on American wines. Few people know that the United States is one of the largest wine-producing countries, and its wines are highly regarded by professionals. Guests at The 312 will be able to experience this for themselves by choosing from the largest selection of American wines in Moscow. Interior: The interior features a spacious two-story loft filled with industrial details and vintage charm. Brick walls, exposed pipes, and large windows all contribute to the atmosphere of the Windy City. The ground floor focuses on a metal structure resembling a freight elevator, as well as the bar and kitchen. The founders envision this space as a venue for various events, including jazz bands, cabaret shows, and other performances. The second floor is more intimate and offers a great view of all the guests and activity below.
