Non-traditional Georgia on the Baltic Sea – in Kaliningrad's Rybnaya Derevnya (Fish Village)

This is not your typical Georgian restaurant in Rybnaya Derevnya. It's a unique take on Georgian cuisine, brought to you by experts and featuring unconventional concepts. Kaliningrad hasn't seen anything like it before. The cuisine offers new flavors and experiences, with influences from different regions of Georgia: Kakheti, Svaneti, and Racha, combined with innovative uses of local Baltic ingredients. The concept is inspired by the story of the first Georgian to visit Königsberg in 1697. Modern cooking techniques, a wood-fired oven, and a "fire island" are just some of the features. The restaurant sources meat and fish from local Kaliningrad suppliers, uses spices imported from the Caucasus, and has a cocktail bar laboratory that creates beverages without using industrial syrups or sugars. Guests can see the dry-aging cabinets for fish and meat, and there's a modern raw bar with a 650-liter tank for seafood. The design is authentic, using natural materials, and the tableware is custom-made by Kaliningrad potters. A wine cabinet showcases products from leading Georgian winemakers, and the background music is provided by DJ Giorgi Topuridze, featuring shamanic motifs. Artificial intelligence and augmented reality are integrated into the interior design; the menu features 3D models of certain dishes, and Georgian poetry is displayed on the ceiling panels. And, as with anything new, interesting, and unexpected, guests can expect frequent changes to the menu, culinary experiments, events hosted by the head chef, and an open terrace with 150 seats. "Teliani" is a new take on Georgia on the Baltic Sea, free from clichés and stereotypes.
