At the new, aesthetically refined Self Edge Japanese restaurant in Moscow, the team presents products of exceptional quality, a vibrant collection of sake, and, of course, their genuine hospitality.

Dreamteam has opened its third Self Edge Japanese restaurant. Fresh seafood and fish are the restaurant's pride: creamy oysters straight from the Hyogo prefecture, scallops and squid from Sakhalin Island, crab from Kamchatka, tuna and hamachi from Japan, and carabineros shrimp from Sicily. Ginger and wasabi come directly from Japan, while the Nikiri (a type of soy sauce) is handmade, and the chef adds sake and dashi broth to the soy sauce. The menu features signature dishes from the brand chefs, Dmitry Tyan, of the Self Edge Japanese restaurants in St. Petersburg and Yekaterinburg. The best way to start your culinary journey is with the "RAW" section: sashimi and nigiri (served in the authentic style with a touch of wasabi and Nikiri), or the tasting "Raw Plate" and "Nigiri Set." Be sure to try the hand rolls, nori wraps, and the chef's signature osizushi (pressed sushi made with an osibako mold), crispy rice with crab, the signature gedzu dumplings with shrimp and crab, and shrimp tempura. From the hot dishes, try the tempura eel, duck or Wagyu udon noodles, and for dessert, the famous mochi with white chocolate and mango. Working with seafood and fish of exceptional quality is a true treasure hunt, where rare finds are highly valued. That's why Self Edge holds a "Fish Market" every week, featuring rare fish and seafood not on the regular menu, prepared by the chef using classic Japanese techniques and original recipes. Self Edge Japanese boasts the most impressive sake collection in Russia, with 50 varieties of the finest product on the ever-changing sake market. The selection includes the most interesting and unusual options, categorized for easy browsing. The sake menu is constantly updated with new selections and unique bottled options, available in limited quantities. Additionally, a special flagship sake is always offered by the glass. The wine list is a true encyclopedia of exquisite wines, with a particular focus on the great regions of Champagne and Burgundy. Each selection is carefully chosen to offer guests a unique opportunity to enjoy rare and exceptional wines that are difficult to find elsewhere. The list includes innovative and legendary winemakers, each with their own unique style and story. The cocktail menu, created by head bartender Alexander Nabokov, is a journey through Japan and its prefectures, expressed through the ingredients and the sensations evoked by the country. The 10 cocktails and 3 mocktails are built around the concept of subtle flavors and low alcohol content, using classic Japanese ingredients such as apple, wasabi, cherry, shiso, yuzu, pear, strawberry, plum, and kumquat. The restaurant's interior is a reimagining of the best elements of Japanese culture, but without being strictly authentic. The design combines noble materials and diverse geometric furniture to create a vibrant and modern Japanese atmosphere. The understated elegance and connection to nature are emphasized by details such as olive wood, dark wood furniture, soft lighting, windows adorned with screens, tables and chairs of various shapes, and the contrast of geometry in the design. A large cabinet at the entrance is decorated in the "chinoiserie" style, reflecting the integration of Eastern motifs into European art. A striking orange panel depicting fish is a signature element that has become recognizable in other Self Edge Japanese restaurants. The tableware, a source of pride for the restaurant, offers guests a chance to experience Japanese culture firsthand and appreciate the hand-painted designs. The collection includes a wide range of porcelain from Japan, plates from the legendary Florentine manufacturer Richard Ginori, and a sparkling selection of glassware from European producers such as Riedel, Spiegelau, and Gabriel Glass. The intimate atmosphere and the comfort of the guests are enhanced by the music, which is an integral part of the Self Edge Japanese concept. In the new restaurant, the music is even more prominent, with a professional sound system and Izakaya-style parties on Fridays and Saturdays, featuring vinyl sets by DJs. Even the interior incorporates vintage vinyl records from Japan, further emphasizing the importance of music in the project. Drawing on their previous experience, Dreamteam is opening a brand new chapter of Self Edge Japanese, now in the capital.
