A bar featuring organic wines in a restored 19th-century pavilion.

ABOUT THE RESTAURANT The concept of the project is organic, biodynamic, and natural wine, produced using traditional, pre-industrial methods, in accordance with natural cycles, with a complete rejection of chemical treatments in the vineyard and soil. This is wine that defies the rules, is young at heart, sincere, and not boring. Enthusiastic winemakers interact with sommeliers and wine lovers from all over the world through festivals and wine bars, forming a unique, informal community. Currently, only 3% of wines in the world are organic, but the circle of their enthusiasts is growing. The bar's small menu features wild oysters from the Sea of Japan, Florentine steak, duck liver pâté, Burgundian cheese puffs, green salads, and artisanal local cheeses. The bar building is part of a classic ensemble built in Ekaterinburg in the early 19th century and restored from ruins in 2019. At the center of the interior, designed by Yulia Ionova, is a nine-meter dome resembling a star atlas, featuring mythical constellations and alchemical symbols. The exposed brickwork from the time of Alexander I is reflected in the polished tables with natural forms and brass panels. The central chandelier, shaped like a grape cluster, was created by glassblowers from the city of Klin specifically for the bar, while the furniture and lighting fixtures are from Gubi and come from Copenhagen. The wine's qualities are enhanced by the double-walled glasses made from ultra-thin crystal by the small Austrian manufactory Mark Thomas. The bar is managed by Sergei Cherapanov, the best sommelier in the Urals, according to the independent national WHERETOEAT award. The bar is open to guests from 6:00 PM. During the day, the space hosts educational events, lectures, and professional tastings.
