Crayfish patties, crayfish stir-fry, burgers, borscht, hot dogs, chebureks, and khinkali, Olivier salad, and Caesar salad – all featuring crayfish. And there are also buckets of boiled crayfish served with various sauces. Plus, crayfish roe and crayfish oil are available to add even more interest. A "Russian Lobster" cafe has opened in "Gastrovilla" on Novaya Riga.

Valentina Kulikova, the project's author, is confident that crayfish are not only good in traditional Russian dishes; they can enhance almost any international recipe.

First, a company was created to supply crayfish from the Volga region, Altai, and the Urals, and then a restaurant project emerged, which will, of course, continue to develop and will grow into a chain next year.
