About

The main asset of "Roberto" is a wood-fired oven made of red clay, produced by the renowned "GotiTerrecote" company, located near Florence. This type of oven has a hemispherical arch shape and is also known as a Pompeian oven. The fire is lit on one side, and the heat rises, focusing within the sphere and reflecting towards the center of the oven.

This is where "Roberto's" signature dish, the "pinza," is baked. The entire cooking process takes just a couple of minutes, and every guest in the restaurant can witness it firsthand. "Pinza" is an ancient Italian dish, based on a flatbread made from a mixture of flours from three grains: wheat, soy, and rice. The dough is allowed to rest for 72 hours, which gives it an incredible lightness and airiness.

The menu features 14 different types of "pinza," as well as fragrant "focaccia" baked in the oven. The restaurant also offers a wide selection of other classic Italian dishes, including pasta, risotto, ravioli, various bruschettas, and artisanal cheeses. There is also a wide variety of fish and seafood dishes, and the most delicate homemade desserts created by the pastry chef.

At "Roberto," the wine selection is carefully curated. The Italian selection is complemented by wines from France, Russia, Spain, and Chile. Prices for a bottle start at 1500 rubles. However, there is also a very reasonably priced house wine available for 900 rubles per liter.
