ABOUT THE RESTAURANT Spanning 1000 square meters, the space includes a café with fresh pastries and coffee, a restaurant with an original yet accessible cuisine, a wine bar with a diverse selection, a children's play area, and, of course, its own pastry shop where you can order cakes of all shapes and flavors. Alexander Ayrapetyan, a young chef from St. Petersburg, is responsible for the approachable, everyday cuisine. Now, there's no need to travel to the city center for burrata with tomato salsa or crab with avocado, roasted sweet potatoes with quinoa, or tofu with red rice in coconut milk. You can embark on a culinary journey right here. The restaurant's menu features dishes like cod with cauliflower cream, baked pike perch with vegetables, pike perch with Savoy cabbage and sun-dried tomatoes, pike cutlets with mashed potatoes in phyllo pastry with langoustines, three types of poke bowls, a shrimp platter for two, and mussels in flavorful sauces. The focus is on the quality of the ingredients and combinations that appeal to adults, children, and millennials alike. The interior of "Polet" (Flight) resembles a set from a science fiction film. Of course, it's space-themed. "Oh, brave new world!" you might exclaim, looking at the chandeliers that shimmer with all the colors of bronze, the walls with neon lighting in the style of spaceships, the futuristic furniture, the portholes at the entrance, the steel columns cast in the image of Martian goddesses, and the transparent lamps that resemble celestial bodies. The creators of this space-age minimalism are the American studio Julien Albertini and Alina Pimkina, Asthetique. "Energy, speed, strength, dynamism. The mission of the restaurant of the future is to give the guest new emotions and go beyond the familiar," says Julien Albertini, co-founder of Asthetique.
