EIWA: A Japanese concept restaurant – a symbol of a tree, representing the sum of everything, and a modern, authorial interpretation of traditional Asian cuisine, with a focus on seasonality, freshness, and minimal processing.

EIWA: A vibrant harmony of Asian flavors in a new restaurant on Khodynka. As the seasons change in the cycle of life, so too does the "eiwa" tree. In August, a new pan-Asian restaurant called EIWA, from the Albero group, opened on the first floor of the "Liner" residential complex on Khodynka. The restaurant's inspiration comes from the Japanese Shinto teachings, which state that everything in this world is interconnected. To embody this vibrant harmony in the concept, the image of the EIWA tree was created (in Japanese, "ei" means bright, "wa" means harmony, the sum of everything). This is the spirit that permeates all living things on the planet, a living organism that is constantly changing, guided by the 72 seasons of the Japanese calendar. The EIWA menu offers a modern, authorial interpretation of traditional Japanese cuisine and dishes from Asian countries, with a focus on seasonality and the use of only high-quality, fresh ingredients with minimal processing. Salmon is sourced from the Faroe Islands, and sauces for the dishes are developed and prepared in the restaurant's kitchen, without the use of artificial additives or flavor enhancers. Special items will be added to the menu for each season. The wine list has been carefully curated to complement the flavors of the main menu and includes 63 wines from the New World, 14 of which can be ordered by the glass. The strict geometric patterns on the large stained-glass windows, the minimalist interior, the focused lighting, and the live tropical plants in coconut shell planters, hanging from the ceiling above the tables, create an atmosphere reminiscent of the Land of the Rising Sun. Carp, symbolizing courage, bravery, and fortitude, "swim" in the patterns on the floor, and the composition in the form of a tree of energy brings the restaurant space to life. EIWA communicates with guests through neon haiku characters on the walls, representing the changing seasons according to Japanese tradition. The poems were written by the project's author, Roman Kovalchuk, and the Japanese language expert helped create the characters. They are displayed vertically, from right to left, as is customary in Japan.
